Hot and Sour Soup

Ingredients:

  • 4 cups chicken or vegetable broth
  • 1/2 cup shiitake mushrooms, sliced
  • 1/2 cup bamboo shoots, sliced
  • 1/2 cup firm tofu, cubed
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp chili paste
  • 1 tbsp cornstarch
  • 1 egg, beaten
  • 2 green onions, sliced
  • Salt and pepper, to taste

Instructions:

  1. In a pot, bring the chicken or vegetable broth to a boil.
  2. Add the sliced shiitake mushrooms and bamboo shoots to the pot and let them cook for a few minutes.
  3. Next, add the cubed tofu to the pot and let it cook for another few minutes.
  4. In a small bowl, whisk together the rice vinegar, soy sauce, chili paste, and cornstarch.
  5. Slowly pour the mixture into the pot, stirring constantly.
  6. Let the soup simmer for a few minutes until it starts to thicken.
  7. While stirring the soup, slowly pour in the beaten egg. The egg will cook instantly and form strands in the soup.
  8. Season the soup with salt and pepper to taste.
  9. Garnish the soup with sliced green onions before serving.
