Vegetable Manchow Soup

This soup is made with a flavourful broth, mixed vegetables, and crispy noodles. In this recipe, we’ll show you how to make delicious Vegetable Manchow Soup in the comfort of your own home.

Ingredients:

  • 1/2 cup shredded cabbage
  • 1/2 cup chopped carrots
  • 1/2 cup chopped green beans
  • 1/4 cup chopped capsicum (bell pepper)
  • 1/4 cup chopped onions
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1-2 green chilies, chopped (adjust to taste)
  • 1/4 cup corn starch
  • 1/4 cup water
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon chili sauce
  • Salt and pepper, to taste
  • 2 tablespoons oil
  • 1/2 cup crispy fried noodles (for garnish)

Instructions:

  1. In a small bowl, mix cornstarch and water to make a slurry and set aside.
  2. Heat oil in a large pot over medium heat. Add onions, garlic, ginger, and green chilies and sauté for 2-3 minutes until onions are translucent.
  3. Add chopped vegetables (cabbage, carrots, green beans, capsicum) and sauté for another 2-3 minutes.
  4. Add vegetable broth, soy sauce, vinegar, chili sauce, salt, and pepper. Bring the soup to a boil and then lower the heat and let it simmer for 5-10 minutes.
  5. Add the cornstarch slurry to the soup and stir continuously until the soup thickens.
  6. Taste and adjust the seasoning as needed. If the soup is too thick, add more vegetable broth or water.
  7. Serve the soup hot, garnished with crispy fried noodles.
