Tomato Soup

Tomato soup is a classic comfort food that is easy to make and perfect for any season. Made with ripe tomatoes, herbs, and spices, it is a delicious and healthy meal that can be enjoyed as a starter or main course. In this recipe, we’ll guide you through the steps to make a flavourful tomato soup from scratch.

Ingredients:

  • 2 pounds ripe tomatoes, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions:

  1. Begin by heating the olive oil in a large pot over medium heat. Once the oil is hot, add the onion and garlic and sauté for 2-3 minutes, until softened.
  2. Add the chopped tomatoes to the pot, along with the dried basil and oregano. Cook for 10-12 minutes, stirring occasionally, until the tomatoes have broken down and released their juices.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let the soup simmer for 15-20 minutes.
  4. Remove the pot from the heat and use an immersion blender to blend the soup until it is smooth and creamy. Alternatively, you can transfer the soup to a blender and blend until smooth, then return it to the pot.
  5. Stir in the heavy cream and season the soup with salt and pepper to taste.
  6. Serve the tomato soup hot, garnished with fresh herbs or croutons if desired.
