Tomato soup is a classic comfort food that is easy to make and perfect for any season. Made with ripe tomatoes, herbs, and spices, it is a delicious and healthy meal that can be enjoyed as a starter or main course. In this recipe, we’ll guide you through the steps to make a flavourful tomato soup from scratch.
Ingredients:
- 2 pounds ripe tomatoes, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions:
- Begin by heating the olive oil in a large pot over medium heat. Once the oil is hot, add the onion and garlic and sauté for 2-3 minutes, until softened.
- Add the chopped tomatoes to the pot, along with the dried basil and oregano. Cook for 10-12 minutes, stirring occasionally, until the tomatoes have broken down and released their juices.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let the soup simmer for 15-20 minutes.
- Remove the pot from the heat and use an immersion blender to blend the soup until it is smooth and creamy. Alternatively, you can transfer the soup to a blender and blend until smooth, then return it to the pot.
- Stir in the heavy cream and season the soup with salt and pepper to taste.
- Serve the tomato soup hot, garnished with fresh herbs or croutons if desired.
