Ingredients:
- 1/2 cup shredded cabbage
- 1/2 cup chopped carrots
- 1/2 cup chopped green beans
- 1/4 cup chopped capsicum (bell pepper)
- 1/4 cup chopped onions
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1-2 green chilies, chopped (adjust to taste)
- 1/4 cup corn starch
- 1/4 cup water
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon vinegar
- 1 tablespoon chili sauce
- Salt and pepper, to taste
- 2 tablespoons oil
- 1/2 cup crispy fried noodles (for garnish)
Instructions:
- In a small bowl, mix cornstarch and water to make a slurry and set aside.
- Heat oil in a large pot over medium heat. Add onions, garlic, ginger, and green chilies and sauté for 2-3 minutes until onions are translucent.
- Add chopped vegetables (cabbage, carrots, green beans, capsicum) and sauté for another 2-3 minutes.
- Add vegetable broth, soy sauce, vinegar, chili sauce, salt, and pepper. Bring the soup to a boil and then lower the heat and let it simmer for 5-10 minutes.
- Add the cornstarch slurry to the soup and stir continuously until the soup thickens.
- Taste and adjust the seasoning as needed. If the soup is too thick, add more vegetable broth or water.
- Serve the soup hot, garnished with crispy fried noodles.
